9:00-9:15 Opening Welcome

Gong Ceremony with James Owen

A) Berries, Early Crops and Herbs - Michelle Mclure Join Michele as she pairs herbs with berries and early veggie crops. Delectable Blueberry Borscht Soup, a new version of Strawberry Shortcake, yummy light herbal salad dressings for those early lettuce varieties, herbs with roasted fingerling potatoes and much more. Tasting is encouraged and handouts will be available with 
info and recipes.

B) How To Grow Herbs, or Here, Eat This - Terri Cousson Get answers to those age old questions: Which herbs are best for growing in any garden? How to plant for the best harvest and how to grow the herbs you are most likely to use...perennial or annual and which goes where? Should I buy a plant or sow a seeds? Which herbs to bring in during the winter and how do it.

A) Wild Foods--from Forest to Table - Lynn Murdock & Bun Lai Come along with Lynn (herbalist & forager) and Bun (forager & sushi chef) as they lead you on a fun & informative weed walk where they will identify & harvest local seasonal weeds & turn them into a delicious & nutritious lunch for you to sample.

B) Our Toxic Burden: What We Can Do - Dr. Stacey Munro Everybody on earth has a "toxic burden". Find out where toxins come from and how to avoid them, while having a positive impact on the earth. We will also discuss strategies for detoxification.

Entertainment provided by The Farmer Rick Band "Farmer Rick" is real life farmer, Rick Ouellette, who owns and operates "Shaker Farm Market" in Enfield, CT. He and his band have been entertaining families with their own upbeat pop-rock versions of traditional children's songs as well as original songs since 1999.

A) Fermenting Wellness: When Gas is Good! - Alicia North Join us as we explore healthy digestion by sampling some traditional condiments, beverages and other live cultures to enhance digestion and overall well-being. In this workshop we'll discuss lacto-fermented foods throughout history, their place in modern society and how to prepare your favorites at home to help correct a wide range of health conditions.

B) Nutritional Herbs - Rosemari Roast "Let food be thy Medicine, and Medicine be thy food." Explore the benefits of abundant, wild, easy-to-grow and inexpensive Nutritional Herbs … herbs that you can easily use as simple nutritional powerhouses in your daily food and drink.

A) Making Simple Herbal Extracts at Home - Debra Hultgren The class will be a demonstration presentation. Debra will make simple herbal tinctures/extracts using various plants and plant parts. The class will cover information on everything you need to get started making your own simple and safe extracts for use in your own homes. Handouts will be provided as well as references and resources for obtaining necessary materials.

B) Diabetes: What's eating you? - Marlene McKenzie Join Master Herbalist and Medical Technologist, Marlene McKenzie as she talks about nutrition and botanical use for this statistically sky-rocketing disease.



C) Qi Gong Demonstration with P.J. Harder
